Kim remembers one particular plate she used to eat off of at Granny’s house. All she remembers now was that it had a fireplace someone on it and a poem in the middle. Anyway, she would put all her food in little piles and then eat her way around the plate until she finished. One dish she remembers always making a place for on that plate was Granny’s Macaroni and Tomatoes. Granny used her own canned tomatoes and most often used the small shell macaroni. 2 cups elbow or shell macaroni
1 quart diced, stewed tomatoes
1 large onion, chopped
Make macaroni according to package directions. Drain. combine tomatoes, onions, and macaroni in a saucepan. Simmer 10 minutes to heat tomatoes and cook onions. Serve hot. “Serves a lot.”
