One of Shalon’s neighbors, Nora Cami, made an oil and vinegar dressing for salad and Shalon added to it and her own salad ingredients to create this Greek salad.

Busy, busy, busy. Even at 3, Shalon was in the kitchen on her way to becoming the great chef she is today. This picture was taken in the house on Doe Run Road in Louisville, Kentucky in 1962.
Salad ingredients:
Leaf lettuce
½ package Feta cheese
1 cucumber
¼ jar pepperoncini peppers
1 sweet medium onion, sliced and divided into rings
2 tomatoes, wedged
1 jar artichoke hearts, quartered
Croutons
Dressing ingredients:
½ cup balsamic vinegar
¼ cup olive oil
¼ cup vegetable oil
1 teaspoon garlic powder
Lemon-pepper seasoning to taste
Salt and pepper to taste
Mix salad ingredients. Mix dressing ingredients. Pour dressing over salad and toss. Serve immediately.
