One of Granny’s “Standards.” She made this recipe up herself and we are glad she did. Granny made this dish with her homemade pickles (see Granny’s 14-Day Sweet Pickles) and took it to family homecoming picnics. She also always made this for her family’s Thanksgiving dinner.

Granny is getting ready for a picnic. Her macaroni salad probably made it, too.

2 cups elbow or shell macaroni (Granny had to have shell macaroni and sometimes drove from store to store until she found it!)

1 medium onion, diced

½ small jar pimento, diced

2/3 cup Miracle Whip Salad Dressing

3 eggs, boiled and diced

¾ cup sweet pickle relish or salad cubes (Granny also adds ¼ cup of the juice from her 14-Day Sweet Pickles.)

Add macaroni to salted, boiling water and cook until tender. Drain. Mix in salad dressing so macaroni won’t stick together. Add eggs, pickles, and salt to taste. Mix thoroughly and refrigerate until serving.
