This dish was a staple in the Hitch home and remained as one of daughter Edna’s favorite meals, especially when served with fresh green onions and cornbread.

Wash 2 cups Great White Northern beans. Place beans in a large pot with 6 cups water. (Edna cooked celery top with the stock to season.) Cook on medium heat for approximately 3 hours. Do not let the water cook away – add water, if necessary. One half hour before serving, season with bacon and salt to taste.
