Bobbie is convinced that the secret to this recipe is the Ritz Crackers, the butter, and the cream of mushroom soup. For yummy, moist meatloaf, this is the one to make.

Victoria loves this meatloaf recipe and Kim makes it a lot for her.

3 lbs. ground chuck

1 whole bell pepper, chopped fine

1 medium onion, chopped fine

12–18 Ritz Crackers

1/4 stick of butter, melted

1/2 can cream of mushroom soup (optional)

3 eggs

1/2 cup ketchup

1 1/2 teaspoons salt

1/4 teaspoon pepper

Using a large bowl, mix all ingredients except the meat. Then, incorporate the meat into the mixture with your hands. Spray a casserole dish with cooking spray, place the meat into the dish and form a loaf. Bake uncovered at 350º F. for 45 minutes. Take the dish out of the oven and spread an even layer of ketchup over the top and bake another 15 minutes.
