The fresh cilantro is what makes this Mexican dish.  Serve with Aunt Peri’s Rio or Fajitas.

2 medium tomatoes

1 medium onion

1 medium green pepper

1 teaspoon Jalapeño peppers (add more or less to heat it up or cool it down)

½ bunch FRESH cilantro, chopped fine

Pinch of salt

Dice all ingredients and combine.
