This recipe came from Callie’s mother-in-law, Clara Clark, and was one of Callie’s favorite recipes. This picture of Clara was taken in her kitchen in Campbellsville, Kentucky.
1 cup chopped dates
1 cup boiling water
1 teaspoon baking soda
½ cup shortening
1 cup sugar
1 ¾ cup flour
2 eggs
½ teaspoon cream of tartar
1 teaspoon vanilla
Add the cream of tartar to the flour. Add baking soda and boiling water to the dates and cool.
Cream the shortening, sugar, eggs, and vanilla. Add date mixture and then flour.
Pour this into a 9 inch pan and bake in a 350º F. oven for about 30 minutes. Add nuts and chocolate chips, if desired.
