Aunt Kim started the Wee Chef Cooking School as a fun way for kids to learn cooking and baking in the summer. The students started with simple recipes like Cucumber Sandwiches and, through the week, tackled more complicated ones. Surprisingly, this simple hors d’oeuvre was one of the kids’ favorites. Recently we made these tasty tea sandwiches for Brittany’s graduation open house (2005.)

8 slices loaf bread
Plain or flavored cream cheese, softened for spreading
½ cucumber, thinly sliced
Construct sandwiches. Crust can be left on or trimmed if creating tea sandwiches for hors d’oeuvres. Cut bread at both diagonals creating 16 wedges. Keep sandwiches under plastic wrap until service.
