This is another Edna Bennett classic recipe!  She made desserts on special occasions and this was absolutely our favorite peach dessert. Kim was always fascinated how the boiling water made the most scrumptious crust.

Batter:

3/4 cup sugar

1/2 cup milk

4 tablespoons butter

½ teaspoon salt

1 teaspoon baking powder

1 cup flour

Super-Duper Topping:

1 cup of sugar

1 tablespoon cornstarch

1/4 teaspoon salt

1 cup boiling water

Arrange 2 cups sliced, raw peaches placed in the bottom of an 8″x8″x2″ pan. Mix the batter by combining sugar and butter with the dry ingredients, alternating with milk, and pour over the fruit.

For the topping, mix the sugar, cornstarch, and salt and sift this mixture over the batter. Pour the boiling water over all. Bake at 325º F for 50 minutes. Serve warm with or without ice cream.
