Shalon scaled down and modified a cheesecake recipe to make this one her own. We all agree, it’s a winner!

Crust:

1 ½ cup graham cracker crumbs

¼ cup confectioners sugar

6 tablespoons melted margarine

Cake:        

4 packages cream cheese, room temperature

1 ½ cups sugar

2 tablespoons plain flour

4 eggs

2 egg yolks

1 ½ teaspoon lemon peel

1 ½ teaspoon orange peel

¼ cup whipping cream

¼ teaspoon vanilla extract

Grease the sides of a springform pan. Form the crust in the bottom only. Combine ingredients for the cake. Pour cake batter over the crust. Cook at 500º F. for 10-15 minutes—no cracks. Then reduce heat to 250º F. for 1 hour. Turn off the oven—open the door. Let the cheesecake cool inside the oven.
