A favorite Kim, Shalon, and Peri used to like to make as kids. Brittany wanted to make sure this one was in the volume, too.

1/2 cup melted butter or margarine
2 eggs, well beaten
1 tsp vanilla
1 cup sugar
1/2 cup sifted plain flour
3 tablespoons cocoa
Mix ingredients in a large bowl. Beat well with a mixer. Pour batter in a greased glass pie pan. Bake at 325º F. for 25 minutes.
To make this recipe really elegant, add 1/2 cup chopped pecans before baking. Presentation: place a piece of “pie” on a dessert plate with a scoop of vanilla ice cream and squirt chocolate syrup in a zigzag fashion over the entire plate. Garnish with a sprig of mint.
