There were quite a few times Pa called Grandmother as he was leaving work in the afternoon at AT&T and said the famous words, “I’m bringing someone home with me for dinner tonight!” Hot Fudge Cake was Grandmother’s quick f ix dessert for such an occasion. It was simple to put together in a hurry and it was decadent. (Chocolate cake freezes well, so it is easy to have on hand in just such emergencies.) She got this idea from the Shoney’s menu on one of the stops for meals on long trips between Nashville and Louisville (before interstates!)

1 Devil’s Food Cake mix
1 half gallon vanilla ice cream
Hot fudge sauce
(Whipped cream and cherry are optional as garnish, but Grandmother never served it this way.)
Make and bake chocolate cake according to package instructions in a 9 x 13″ cake pan. After the cake has slightly cooled, cut 2 inch squares of cake then slice each square horizontally. Cut a 2 inch slab of vanilla ice cream and sandwich it in the middle of the two cake layers you have created. Pour about 4 tablespoons of hot fudge sauce over the top of each square and dessert is ready!
